
The Mulard Duck
The Mulard duck is a sterile hybrid. It is a cross between a male Barbary and a common female (normally a Peking Duck). It is bred to produce foie gras and breasts.
For foie gras production Mulard males are more sought after than the females because:
- they have better sexual dimorphism (300 - 600 grams per duck at 12 weeks),
- there is a difference in the quality of the liver ( female livers are very often "veined" and therefore downgraded).
